Preparation of Oysters

Shucking the Oysters
Carefully shuck the fresh oysters, keeping the meat in the bottom shell. Place the shucked oysters on a baking tray.

Preheat the Broiler
Preheat your oven's broiler to high.
Florentine Mixture

Sauté the Spinach
In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Then add the fresh spinach and cook until wilted. Season with salt and black pepper.

Combine Ingredients
Remove the skillet from heat. Stir in the grated Parmesan cheese and breadcrumbs until everything is well combined.

Top Oysters
Spoon the Florentine mixture generously over each oyster in the shell.
Beef Fat Hollandaise

Prepare Hollandaise Base
In a heatproof bowl, whisk together the egg yolks and lemon juice until thick and pale.

Add Beef Fat
Slowly drizzle in the rendered beef fat while continuously whisking to create an emulsion. If the sauce becomes too thick, add a little warm water to thin it out.

Season the Sauce
Season the hollandaise sauce with salt and cayenne pepper to taste.
Broiling Oysters

Broil the Oysters
Place the prepared oysters under the broiler for about 5-7 minutes, or until the topping is golden brown and the oysters are cooked through.

Serve
Carefully remove the baking tray from the oven. Drizzle the beef fat hollandaise over the broiled oysters and serve immediately.
