    Warm tortillas

    Wrap tortillas in a damp paper towel and microwave 20-30 seconds or warm individually in a dry skillet until pliable.

    Rinse and prep beans

    If using canned beans, drain and lightly mash in a bowl to help bind the filling. Set aside.

    Sauté aromatics

    In a skillet over medium heat, add olive oil. Sauté diced onion until translucent, about 3-4 minutes. Add minced garlic and cook 30 seconds more.

    Bloom spices

    Stir in ground cumin, chili powder, salt, and black pepper. Cook 1 minute to bloom the spices.

    Create three-way chile bean mixture

    Add red chile sauce and green chile sauce to the beans and aromatics. Simmer 5-7 minutes, stirring occasionally until heated through and well combined.

    Assemble burritos

    Lay a warmed tortilla on a work surface. Spoon a generous portion of the chile-bean mixture down the center. Top with shredded cheese if using. Fold in the sides and roll up tightly to enclose filling.

    Optional finish

    If desired, return burritos to the skillet seam-side down for 1-2 minutes to lightly toast and seal. Serve warm.
