1. Prepare green chile sauce
In a medium saucepan, heat 1 tablespoon oil over medium heat. Add the onion and garlic; sauté until translucent. Stir in chopped green chiles, cumin, oregano, and coriander. Add water and simmer for 15-20 minutes to blend the flavors. Season with salt and pepper to taste. If you prefer a thicker sauce, boil gently for a few minutes to reduce.
2. Cook the pork
In a large skillet, heat the remaining 1 tablespoon oil over medium-high. Brown the pork cubes on all sides, about 6-8 minutes. Add 1 cup of the green chile sauce to the pork to help braise, and simmer until pork is tender, about 20-25 minutes. Shred slightly with a spoon.
3. Prepare fillings
Warm the pinto beans and rice (if using) in separate pots. Grate or shred the cheese. Chop cilantro and cut lime into wedges. Set aside.
4. Assemble burritos
Warm the flour tortillas in a dry skillet until pliable. For each burrito, layer a line of beans, a portion of pork, a spoonful of rice (optional), and a handful of cheese. Roll tightly, tucking the ends in.
5. Smother and bake
Arrange burritos seam-side down in a baking dish. Pour the remaining green chile sauce over the top and sprinkle with the remaining cheese. Bake at 375°F (190°C) for 12-15 minutes, until the cheese is melted and bubbling.
6. Garnish and serve
Garnish with chopped cilantro and a squeeze of lime. Serve with sour cream on the side if desired.
