    Prep ingredients: Shred chicken (if not already shredded), rinse and drain black beans, dice potatoes, onions, and bell peppers, mince garlic, and chop cilantro if using.

    Cook potatoes: In a large skillet, heat 1 tablespoon olive oil over medium heat. Add diced potatoes and cook 8-10 minutes, stirring occasionally, until tender and lightly browned. Remove potatoes from skillet and set aside.

    Sauté aromatics: In the same skillet, add remaining olive oil if needed. Sauté onions, peppers, and garlic until softened, about 5 minutes.

    Make filling: Return potatoes to skillet with onions and peppers, then add shredded chicken and black beans. Stir in cumin, chili powder, paprika, salt, and pepper. Cook 3-5 minutes until heated through. If filling seems dry, add a splash of water.

    Warm tortillas: Warm flour tortillas in a dry skillet or microwave until pliable.

    Assemble burritos: Place about 1/4 of the filling on each tortilla. Top with shredded cheese and salsa. If using, sprinkle cilantro and a squeeze of lime. Roll tightly into burritos, folding in the sides as you go.
