    Prepare aromatics

    Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic; sauté until translucent and fragrant, about 3–4 minutes.

    Rehydrate chiles and start the sauce

    Rinse the guajillo chiles and soak in hot water for 12–15 minutes until soft. Drain (reserve 2–3 tablespoons of soaking liquid) and blend the chiles with 1/2 cup beef broth and 1 cup red enchilada sauce until smooth. If too thick, loosen with the reserved soaking liquid.

    Heat machaca

    Add shredded machaca to the skillet with the onions and garlic. Stir for 2–3 minutes to warm through and lightly brown.

    Combine with chile sauce and spices

    Pour the chile blend into the skillet. Add ground cumin, oregano, paprika, and salt. Simmer gently for 6–8 minutes, stirring occasionally, until the flavors meld and the mixture is slightly thickened.

    Prepare burritos

    Warm the tortillas in a dry skillet or microwave until pliable. Spoon a line of cheese down the center of each tortilla, then top with a generous amount of the machaca mixture. Add a little extra cheese on top.

    Roll and seal

    Fold in the sides and roll the burritos tightly. Place seam-side down in a clean skillet and cook for 2–3 minutes to help seal and melt the cheese.

    Optional finish

    If desired, transfer burritos to a preheated oven at 375°F (190°C) for 5–7 minutes to ensure all cheese is melted and the burritos are heated through.

    Top with chopped cilantro and serve with lime wedges and sliced avocado on the side.
