Prepare Red Chile Sauce
Toast guajillo chiles in a dry skillet for 1-2 minutes until fragrant. Soak in hot water for 15-20 minutes until softened; drain. In a blender, combine chiles with garlic (about 3 cloves total across steps), oregano, cumin, paprika, salt, orange juice, and enough soaking water to create a smooth sauce.

Cook the filling
Heat 2 tbsp oil in a large skillet over medium heat. Sauté white onion until translucent. Add shredded machaca and 1 cup of red chile sauce; simmer 5-7 minutes to meld flavors. In a separate skillet, scramble eggs until just set; set aside.

Assemble Burros
Warm tortillas until pliable. Spoon a portion of the machaca and chile filling onto each tortilla, sprinkle with shredded cheese, add chopped cilantro, and squeeze lime juice over. If desired, add the scrambled eggs. Roll burritos tightly and serve with extra sauce on the side.
