Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Warm each tortilla to make rolling easier by microwaving for 15-20 seconds or heating briefly in a dry skillet for 5-10 seconds per side.

In a skillet, heat 1 tablespoon oil over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for 30 seconds more. Season with a pinch of salt.

In a large bowl, combine shredded chicken, shredded cheese, the sautéed onion and garlic, and chopped cilantro. Mix until the filling is evenly combined.

Dip each tortilla in warmed enchilada sauce to coat lightly, then place on a work surface. Spoon about 2-3 tablespoons of filling into the center of each tortilla and roll tightly. Place seam-side down in the prepared baking dish.

Pour the remaining enchilada sauce over the rolled tortillas in the baking dish. Sprinkle the remaining cheese over the top.
