    Brown the chicken

    Season the chicken with salt, pepper, cumin, smoked paprika, chili powder, and oregano. Heat the olive oil in a large skillet over medium-high heat and sear the chicken until browned on all sides and just beginning to cook through, about 4-5 minutes. Remove to a plate.

    Sweat the garlic

    In the same skillet, add the garlic and sauté for 30-60 seconds until fragrant, scraping up any browned bits from the bottom.

    Bloom the spices and build the sauce

    Return the chicken to the skillet. Add chipotle peppers in adobo sauce, adobo sauce, and red enchilada sauce. Stir in 1/2 cup water and simmer for 6-8 minutes to create a thick, red sauce and finish cooking the chicken.

    Parboil potatoes

    Meanwhile, in a separate pot, boil salted water and parboil the diced potatoes until just tender, about 5-7 minutes. Drain.

    Add beans and potatoes

    Add the parboiled potatoes and drained kidney beans to the chicken and sauce. Simmer until the potatoes are tender and the beans are heated through, about 8-10 minutes. If the sauce reduces too much, splash in a bit more water.

    Season to taste

    Taste and adjust salt and pepper as needed. If you like it spicier, add a pinch more chili powder or 1 additional chipotle pepper.

    Warm tortillas

    Warm the large burrito tortillas in a dry skillet or on a griddle until flexible and lightly blistered, about 15-20 seconds per side.

    Assemble burritos

    Spread a generous portion of the filling down the center of each tortilla. Top with shredded cheese and chopped cilantro. Squeeze a little lime juice over the filling if desired.

    Roll and toast

    Fold in the sides and roll the burritos tightly. Return to the skillet seam-side down and cook for 1-2 minutes to lightly toast and seal.

    Serve with toppings

    Slice burritos in half, serve warm, and offer additional toppings like sour cream, avocado, or extra cilantro as desired.
