    In a large skillet, heat 1 tablespoon olive oil over medium heat. Add 1 medium onion (diced) and 2 cloves garlic (minced); cook until softened, about 5 minutes. Stir in 1 teaspoon ground cumin, 1 teaspoon chili powder, 1/2 teaspoon smoked paprika, 1/2 teaspoon dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper; toast spices 1 minute to bloom.

    Add chicken and red sauce

    Add 2 cups shredded chicken to the skillet and pour in 1 cup red enchilada sauce plus 1/2 cup water if needed. Simmer 5-7 minutes until chicken is heated through and flavors meld.

    Prepare beans and tomatoes

    In a separate pot, combine 1 cup drained beans and 1 cup diced tomatoes with green chilies. Simmer gently 5-7 minutes, seasoning with a pinch of salt.

    Finish filling

    Stir the bean-tomato mixture into the red chicken filling. Add 1 tablespoon lime juice and 2 tablespoons chopped cilantro; adjust salt and pepper to taste.

    Prepare tortillas

    Warm 6 burrito-size tortillas in a dry skillet or microwave until pliable, about 20-30 seconds.

    Assemble burritos

    Spoon filling down the center of each tortilla. Top with 1 cup shredded cheese and optional toppings: 1/2 cup sour cream and 1 avocado, sliced. Roll up burritos, folding the sides in as you go. Optional: toast seam-side down in a skillet 1-2 minutes per side to seal.
