Heat olive oil in a large skillet over medium heat. Add the onion and garlic; sauté until the onion is translucent and fragrant, about 4–5 minutes.

Add the ground beef to the skillet. Cook, breaking it up with a spoon, until browned and no pink remains, about 6–8 minutes. Drain excess fat if needed.

Stir in chili powder, cumin, paprika, and black pepper. Cook for 1–2 minutes until spices are fragrant. Season with salt to taste.

Pour in the tomato sauce and simmer the beef mixture for 5–7 minutes to meld flavors. Taste and adjust salt if needed.

While the beef simmers, crisp the tostada shells: preheat oven to 350°F (175°C) and bake shells in a single layer on a baking sheet for 5–7 minutes, until crisp.

Prepare toppings: rinse and shred lettuce, shred cheddar cheese, and prepare pico de gallo if making from fresh tomatoes. Slice avocado if using.

Assemble: Place a spoonful of red beef on each crisp tostada shell. Top with shredded lettuce, cheddar cheese, pico de gallo, a dollop of sour cream, and optional avocado slices. Garnish with cilantro and a squeeze of lime.
