    Prepare fillings

    In a skillet over medium heat, melt 1 tablespoon butter or heat 1 tablespoon oil. Add onion and bell pepper; sauté until softened, about 3–4 minutes. Stir in corn; season with 0.5 teaspoon salt. If using protein, add the cooked chicken or chosen protein and warm through. Remove from heat and set filling aside.

    Season cheese

    In a mixing bowl, combine shredded cheese with 1 teaspoon ground cumin and 1 teaspoon chili powder or paprika. Toss to evenly distribute spices.

    Prepare cooking surface

    Warm a large nonstick skillet or griddle over medium heat. Lightly brush or rub with a little butter or oil so the first quesadilla browns nicely.

    Assemble the quesadilla

    Place a tortilla on a flat surface. Sprinkle a layer of the seasoned cheese on half of the tortilla. Add an even layer of the prepared filling (onions, peppers, corn, and protein if using). Top with a final sprinkle of cheese. Fold tortilla over to create a half-moon, pressing gently to compact.

    Cook the folded quesadilla

    Place the folded quesadilla in the hot skillet. Cook until the bottom is golden and cheese is starting to melt, about 2–3 minutes. Flip carefully and cook the other side until golden brown and cheese is fully melted, about 1–2 minutes more. Repeat with remaining tortillas and fillings.

    Remove from skillet, let rest 1–2 minutes, then slice into wedges. Serve with salsa, sour cream, guacamole, or pico de gallo as desired.
