Nachos

Method

Nachos

  1. 1

Preheat the oven to 375°F (190°C). Line a large baking sheet with parchment for easy cleanup.

  2. 2

In a large skillet, cook the ground beef over medium-high heat until browned, about 6-8 minutes. Drain excess fat.

  3. 3

Stir in chili powder, cumin, garlic powder, onion powder, and smoked paprika. Cook 1 minute to bloom the spices.

  4. 4

Add red chile enchilada sauce and simmer 3-5 minutes until slightly thickened. Season with salt to taste.

  5. 5

Warm the refried beans in a small pot or microwave until smooth.

  6. 6

Prepare pico de gallo: combine diced tomatoes, diced onion, minced jalapeño, chopped cilantro, lime juice, and salt. Let sit 5-10 minutes to meld flavors.

  7. 7

Assemble nachos: on the baking sheet, spread a layer of chips. Dollop half the refried beans evenly over chips, then sprinkle half the beef and a portion of cheese.

  8. 8

Add a second layer of chips and repeat with the remaining beans, beef, and cheese. Top with remaining cheese.

  9. 9

Bake in the preheated oven for 8-12 minutes, or until cheese is melted and bubbling.

  10. 10

Remove from oven. Dollop sour cream/crema on top and spoon pico de gallo over nachos. Serve immediately.
