Fluff the cooked rice with a fork and keep warm.

Lay one tortilla on a clean surface. Spread 1/2 cup of refried beans across the center of tortilla 1 in a long strip.

Top the beans with 1/2 cup rice on tortilla 1.

Add 1/2 cup of the cooked meat over the rice and sprinkle with 1/2 cup shredded cheese.

Dollop 1/4 cup sour cream and 1/2 cup salsa over the fillings, then add 1/2 cup chopped lettuce.

If using guacamole, spread 1/2 cup on the edge of the second tortilla.

Place the second tortilla over the fillings, offset so the burrito will be longer when rolled, leaving about 1/2 inch of tortilla 2 hanging over the top edge.

Carefully roll the burrito lengthwise from the bottom edge to the opposite side, using the overhanging tortilla to help seal and extend the wrap. You can tuck in the sides as you go to keep fillings contained.

If desired, sprinkle the remaining 1/2 cup cheese over the top and drizzle with additional salsa or sour cream. Optional: wrap in foil for serving.
