Brown aromatics and sear beef
In a large skillet, heat the vegetable oil over medium heat. Add the diced yellow onion and minced jalapeño; cook until softened, about 3-4 minutes. Add minced garlic and cook for 30 seconds until fragrant.

Cook beef and season
Add the flank steak pieces to the skillet and sear until browned on all sides, about 4-6 minutes. Sprinkle with cumin, chili powder, oregano, paprika, salt, and pepper; stir to coat the meat with spices.

Warm beans and tostadas
Gently reheat the refried beans in a small pot until smooth. If the tostadas are not crisp, bake or toast them in a 350°F (175°C) oven for 3-5 minutes until crisp.

Prepare toppings
Rinse and dry the lettuce, then shred. Dice the tomato. Chop cilantro. Mince jalapeño. Juice the lime to yield about 1 tablespoon of juice.

Spread a thin layer of refried beans on each tostada. Top with warm machaca, then add lettuce, tomato, cilantro, jalapeño, a drizzle of lime juice, and a sprinkle of queso fresco. Add avocado slices and a dollop of sour cream if desired.
