Machaca Beef Filling

Machaca Beef Filling

    In a large skillet over medium heat, warm the vegetable oil. Add the onion and green bell pepper; sauté until softened, about 4-5 minutes.

    Sprinkle in garlic powder, cumin, chili powder, smoked paprika, salt, and black pepper. Stir for about 30 seconds to bloom the spices.

    Add the shredded machaca beef and diced tomatoes. Cook, stirring occasionally, until the beef is heated through and flavors meld, about 5-7 minutes.

    Finish with chopped cilantro. Taste and adjust seasoning as needed. Keep warm.

Beans

    In a small saucepan, combine the cooked pinto beans and refried beans. Warm over medium heat, stirring occasionally.

    Season with ground cumin and salt. If the mixture is too thick, stir in 1-2 tablespoons water until you reach a creamy, sauce-like consistency.

Tortillas & Assembly

    Warm Tortillas

    Warm the four flour tortillas in a dry skillet for about 15-20 seconds per side or wrap in a damp towel and microwave until pliable.

    Assemble Beans on Tortillas

    Spread about 2-3 tablespoons of warmed beans on the center of each tortilla.

    Add Machaca Filling

    Spoon about 3/4 cup of machaca beef filling onto each tortilla.

    Add Cheese & Salsa

    Top with 1/4 to 1/2 cup shredded cheese and 1/4 cup salsa or pico de gallo. If using, add sour cream and guacamole.

    Roll up the burrito tightly. Slice in half if desired and serve with extra cilantro.
