    Prepare peppers and aromatics

    Put on gloves; rinse peppers, remove stems; roughly chop peppers. Peel garlic. Dice the white onion.

    Combine ingredients

    In a heavy-bottom saucepan, add peppers, onion, garlic, vinegar, water, salt, sugar, lime juice, smoked paprika, and cumin.

    Simmer

    Bring to a boil over medium-high heat, then reduce heat and simmer for 15–20 minutes until peppers and onion are very soft.

    Blend the sauce

    Carefully blend with an immersion blender until smooth. For an ultra-smooth sauce, blend thoroughly and strain through a fine-mesh sieve.

    Return to heat and simmer 5–10 minutes to thicken slightly. Taste and adjust salt or lime juice as needed.
