    Prepare machaca

    If using dried machaca, rehydrate according to package instructions in hot water or stock until tender. Drain well and flakes easily.

    In a large skillet, heat olive oil over medium heat. Add diced onion and minced jalapeño; sauté until soft and translucent, about 4-5 minutes.

    Add minced garlic; sauté for 30 seconds until fragrant.

    Stir in salsa verde and ground cumin; simmer 3-4 minutes to bloom flavors and meld with onions.

    Add the rehydrated machaca; cook 6-8 minutes, breaking up any clumps, until heated through and slightly browned. Season with salt and pepper to taste.

    Taste and adjust seasoning as needed. Keep warm over low heat.

Beans

    Sauté aromatics

    In a separate skillet, heat olive oil over medium heat. Add onion; sauté until translucent, about 3-4 minutes.
