Burros

Method

Burros

  1. 1

    Sauté aromatics and chiles

Heat olive oil in a skillet over medium heat. Add diced onion and cook until translucent, about 3–4 minutes. Add minced garlic, cumin, chili powder, and paprika; cook 30 seconds until fragrant. Stir in roasted green chiles and mashed pinto beans; season with salt. Cook 5–7 minutes, mashing beans lightly for a creamy texture.

  2. 2

    Finish the bean mixture

If using rice, fold in the warmed cooked rice and chopped cilantro. Add lime juice and taste, adjusting salt if needed. Keep filling warm.

  3. 3

    Warm tortillas

Warm flour tortillas in a dry skillet or microwave until pliable, about 20–30 seconds per tortilla.

  4. 4

    Assemble burritos

Spread a line of bean mixture down the center of each tortilla. Top with shredded cheese and a spoon of salsa verde. Sprinkle with extra cilantro if desired. Fold in the sides and roll tightly to enclose filling.

  5. 5

    Toast and serve

Optionally, toast burritos in a lightly greased skillet or on a grill for 1–2 minutes per side to melt cheese and crisp the tortilla. Serve warm.
