    In a skillet, heat the vegetable oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 30 seconds.

    Sprinkle in the ground cumin and salt. Stir to evenly coat the aromatics and cook for another 30 seconds to bloom the spices.

    Build the bean mixture

    Add the canned green chiles and cooked pinto beans to the skillet. Use the back of a spoon to mash a portion of the beans to a creamy texture while leaving some beans intact. Simmer 6-8 minutes, stirring occasionally.

    Stir in chopped cilantro and lime juice. Taste and adjust salt if needed.

    Keep shredded cheese ready and warm tortillas just before assembling.
