Season and flavor
Sprinkle in the ground cumin and salt. Stir to evenly coat the aromatics and cook for another 30 seconds to bloom the spices.

Build the bean mixture
Add the canned green chiles and cooked pinto beans to the skillet. Use the back of a spoon to mash a portion of the beans to a creamy texture while leaving some beans intact. Simmer 6-8 minutes, stirring occasionally.

Stir in chopped cilantro and lime juice. Taste and adjust salt if needed.

Keep shredded cheese ready and warm tortillas just before assembling.

Warm the tortillas until pliable. Spoon a generous amount of the bean mixture down the center of each tortilla. Sprinkle with shredded cheese. If desired, add a little salsa and a dollop of sour cream.
