Burros
Method
Burros
- 1
Prepare the green sauce (salsa verde)
Roast or quickly simmer the tomatillos, jalapeño, onion, and garlic in a tablespoon of oil until softened and lightly charred, about 6–8 minutes. Transfer to a blender with cilantro, lime juice, cumin, and salt. Blend until smooth. If too thick, add a splash of water to reach desired consistency. Set aside.
- 2
Warm beans
In a skillet over medium heat, warm the black beans until heated through. Season with a pinch of salt and set aside.
- 3
Shred and moisten the chicken
If not already shredded, shred the cooked chicken. Stir in about 1/2 cup of the green sauce to lightly coat the meat.
- 4
Warm tortillas
Warm the flour tortillas on a dry skillet or in the microwave until pliable, about 15–20 seconds per side.
- 5
Assemble the burritos
Lay each tortilla flat. Divide the chicken, beans, and cheese among the tortillas. Drizzle with additional green sauce, then fold in the sides and roll tightly into burritos. If desired, drizzle more sauce on top.
- 6
Crisp and serve
Optional: toast burritos seam-side down in a skillet for 1–2 minutes per side until lightly browned. Serve with lime wedges and extra green sauce on the side.
