Prep and preheat
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. Wash and dry the potatoes.

Cut and season fries
Cut potatoes into evenly sized fries. In a large bowl, toss potatoes with olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper until well coated.

Roast fries
Spread fries in a single layer on the prepared sheet. Bake 25-30 minutes, turning once halfway, until crisp and golden.

Season and cook chicken
Pat chicken dry. In a separate bowl, combine chili powder, ground cumin, paprika, salt, and pepper. Rub the spice mix onto the chicken and drizzle with 1 tablespoon olive oil. Cook in a hot skillet over medium-high heat for about 6-8 minutes per side, until cooked through and internal temperature reaches 165°F (74°C). Dice or slice the cooked chicken.

Cheese prep
Shred cheddar cheese and set aside for topping.

Crema mix
In a small bowl, whisk crema (or sour cream) with lime juice and chopped cilantro until smooth.

Assemble
When fries are crisp, spread them on a serving platter. Top with cooked chicken, then evenly sprinkle shredded cheddar cheese. Return briefly to the oven or under the broiler for 1-3 minutes to melt the cheese.

Finish and serve
Drizzle crema over the top, add jalapeño slices and pico de gallo if using. Garnish with remaining cilantro and serve immediately.
