Prepare fries
Preheat oven to 425°F (220°C). If using fresh russet potatoes, cut into even fries, rinse and pat dry. Toss with 2 tablespoons vegetable oil, 1 teaspoon salt, 1 teaspoon smoked paprika, and 1 teaspoon garlic powder. If using store-bought frozen fries, spread them in a single layer on a baking sheet and season lightly with paprika and garlic powder.

Bake fries
Spread fries in a single layer on a parchment-lined baking sheet. Bake 25-30 minutes, flipping halfway, until crisp and golden.

Sauté machaca beef
Meanwhile, heat 1 tablespoon olive oil in a skillet over medium-high heat. Add onion and sauté 2-3 minutes until translucent. Add machaca beef and minced garlic, jalapeño, 0.5 teaspoon ground cumin, 0.5 teaspoon paprika, and 0.5 teaspoon salt. Cook 5-7 minutes, stirring often, until beef is heated through and onions are soft.

Melt cheese and layer
When fries are nearly done, sprinkle 2 cups shredded cheddar evenly over fries and return to the oven for 2-3 minutes, until cheese is melted and bubbling.

Finish with toppings
Remove from oven and top with machaca beef, 1 cup crema or sour cream, and 1 cup salsa or pico de gallo. Garnish with chopped cilantro and lime wedges. Serve immediately.
