Prepare tomatoes
Rinse the tomatoes under cold water. Remove stems, core, and blemishes. Dice into roughly 1/2-inch pieces until you have about 4 cups of diced tomatoes.

Prepare onion
Peel and finely dice the yellow onion into small uniform pieces.

Sauté onion in olive oil
In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent and just starting to brown at the edges, about 3–4 minutes.

Pour the diced tomatoes into the skillet with the onion and oil. Stir to combine and spread in an even layer.
