Prepare sides
If making rice, cook 1 cup of white rice according to package instructions. Keep warm. Heat refried beans on low in a saucepan or microwave until smooth.
- 2
Preheat and sauce prep
Preheat oven to 375°F (190°C). In a small saucepan, warm the red enchilada sauce or green salsa verde until just simmering; keep warm.
- 3
- 4
Prepare tortillas
Lightly brush or dip each tortilla with a small amount of the warm sauce to soften (do not soak).
- 5
Fill and roll
Place a portion of shredded cheese (about 1 cup) on each tortilla; add some of the onion-garlic mixture and a pinch of cilantro. Roll tightly and place seam-side down in a baking dish greased with a small amount of sauce.
- 6
Assemble enchiladas
Pour the remaining warm sauce over the rolled tortillas, ensuring they are well coated. Sprinkle the remaining cheese over the top.
- 7
Bake
Bake in the preheated oven for 18-25 minutes until cheese is melted and bubbly and edges are lightly browned.
- 8
Serve
Serve the enchiladas with a side of rice and refried beans. Garnish with extra cilantro if desired.
