    Prepare sides

    If making rice, cook 1 cup of white rice according to package instructions. Keep warm. Heat refried beans on low in a saucepan or microwave until smooth.

    Preheat and sauce prep

    Preheat oven to 375°F (190°C). In a small saucepan, warm the red enchilada sauce or green salsa verde until just simmering; keep warm.

    Sauté aromatics

    In a skillet over medium heat, add 2 tablespoons vegetable oil. Sauté chopped onion until translucent, about 3-4 minutes. Add minced garlic and cook for another 30 seconds. Remove from heat and stir in chopped cilantro and salt.

    Prepare tortillas

    Lightly brush or dip each tortilla with a small amount of the warm sauce to soften (do not soak).

    Place a portion of shredded cheese (about 1 cup) on each tortilla; add some of the onion-garlic mixture and a pinch of cilantro. Roll tightly and place seam-side down in a baking dish greased with a small amount of sauce.

    Pour the remaining warm sauce over the rolled tortillas, ensuring they are well coated. Sprinkle the remaining cheese over the top.
