    Season the pork shoulder with a pinch of salt and pepper, then brown in olive oil in batches in a heavy pot until deeply browned. Remove and set aside.

    In the same pot, add the diced onion and sauté until translucent, about 5-7 minutes. Add minced garlic and cook for 30 seconds.

    Stir in red chile sauce, crushed tomatoes, ground cumin, oregano, and bay leaves. Return the browned pork to the pot and pour in broth.

    Bring to a simmer, reduce heat to maintain a gentle simmer, cover partially, and cook for 60-90 minutes, until pork is tender and sauce thickens. Skim fat as needed.

    Season with salt and pepper to taste. Stir in chopped cilantro just before serving.

Green Chile Chicken Verde Enchiladas
