Three-Cheese Enchiladas

    In a skillet, heat the olive oil over medium heat. Sauté the diced onion until translucent (about 3-4 minutes), then add minced garlic and cook for 30 seconds more.

    In a bowl, mix the cheddar, Monterey Jack, and queso fresco with cumin, chili powder, and salt to create a three-cheese filling.

    Warm the red enchilada sauce in a small pot until simmering.

    Dip each tortilla briefly in the warm sauce to soften, spoon a portion of the cheese filling into the center, roll tightly, and place seam-side down in a lightly oiled baking dish.
