    Enchiladas: Filling

    In a large bowl, mix 2 cups shredded cheese (cheddar and Monterey Jack), 0.5 cup finely chopped onion, 2 minced garlic cloves, 1 teaspoon ground cumin, 0.5 teaspoon salt, and 2 tablespoons chopped cilantro. If desired, drizzle 1 tablespoon olive oil to help blend. Set aside.

    Enchiladas: Tortillas

    Warm 12 corn tortillas in a dry skillet until pliable, then wrap to keep soft.

    Enchiladas: Fill and roll

    Spoon about 2 tablespoons of cheese filling onto each tortilla, roll tightly, and place seam-side down in a baking dish.

    Enchiladas: Bake

    Pour 2 cups enchilada sauce over the rolled tortillas. Bake at 350°F (175°C) for 20-25 minutes until bubbling and cheese is melted. Garnish with 2 tablespoons chopped cilantro.

    Beef Tacos: Brown beef

    In a skillet, heat 1 tablespoon olive oil over medium heat. Add 1 lb ground beef and cook until browned, breaking up any clumps.

    Stir in 2 tablespoons taco seasoning and 0.25 cup water. Simmer 5 minutes until sauce thickens and beef is coated.

    Prepare toppings: shred 1 cup lettuce, dice 1 tomato, and have 1 cup shredded cheese ready. Warm 8 flour tortillas if desired.

    Fill each tortilla with some beef, then top with lettuce, tomato, cheese, and a spoon of salsa.

    Rinse 1 cup white rice. In a pot, combine with 2 cups water and 1 cup chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer 15 minutes or until rice is tender.
