Preparation and serving for Combination Dinners

    Make the filling

    In a large bowl, combine the shredded chicken with ground cumin (1 tsp), chili powder (1 tsp), garlic powder (1/2 tsp), onion powder (1/2 tsp), salt (1/2 tsp), and black pepper (1/4 tsp). Mix until evenly seasoned. If desired, stir in 1-2 tablespoons of chopped cilantro.

    Warm the tortillas

    Wrap the 12 small corn tortillas in a damp kitchen towel and microwave 20-30 seconds until pliable for easy rolling.

    Assemble the flautas

    Spoon about 2-3 tablespoons of seasoned chicken filling near the base of each tortilla. Roll tightly from one short end to the other and secure with a toothpick.

    Fry the flautas

    In a deep skillet or fry pan, heat vegetable oil to 350°F (175°C). Fry the flautas in batches, turning as needed, until golden brown and crisp, about 2-3 minutes per side. Transfer to paper towels to drain.

    Warm the sides

    Meanwhile, warm the refried beans in a saucepan over medium heat until smooth and hot. In a separate pot, reheat the cooked Mexican rice until steaming.

    Prep toppings

    Shred lettuce, and set out shredded cheddar cheese, sour cream, guacamole, and pico de gallo. Slice lime wedges for serving. If using cilantro, chop and set aside.

    Plate and serve

    On each plate, arrange 3-4 flautas. Add a side of refried beans and Mexican rice. Garnish with lettuce, cheese, sour cream, guacamole, pico de gallo, cilantro, and a squeeze of lime. Serve immediately.
