Prepare oil and equipment
Pour the vegetable oil into a heavy skillet or Dutch oven to a depth of about 1.5 inches. Heat over medium-high heat until it reaches about 350°F (175°C).

Mix filling
In a large bowl, combine shredded chicken, softened cream cheese, shredded cheese, cumin, chili powder, garlic powder, onion powder, and salt. Stir until the mixture is creamy and evenly seasoned. If using cilantro, fold in the chopped cilantro.

Assemble flautas
Pat tortillas dry if needed. Place about 2–3 tablespoons of filling on the bottom edge of each tortilla. Roll tightly into a cigar shape and secure with a toothpick.

Carefully add a few flautas at a time to the hot oil seam-side down. Fry 2–3 minutes per side, until golden brown and crisp. Adjust heat as needed to maintain a steady sizzle. Remove with tongs and drain on paper towels.
