Marinated Carne Asada

Method

Marinade and Grill

    In a bowl, whisk together orange juice, lime juice, soy sauce, olive oil, minced garlic, cumin, chili powder, salt, and pepper to form a marinade.

    Marinate steak

    Trim the steak if needed, then place in a large zip-top bag or shallow dish and cover with the marinade. Refrigerate for 1 to 2 hours (or up to 4 hours) to tenderize and flavor.

    Preheat grill

    Preheat a grill or grill pan over high heat.

    Cook carne asada

    Remove steak from marinade, pat dry, and grill 2–4 minutes per side for a thin steak, longer if thicker. Rest 5–10 minutes, then slice thinly against the grain.

Assemble and Serve

    Crisp tortillas

    Preheat oven to 400°F (200°C). Brush tortillas lightly with oil and bake 5–7 minutes until crisp, or fry in hot oil until crisp.

    Warm beans

    Warm refried beans in a small pot over low heat, thinning with a splash of water if needed.

    Build tostadas

    Spread a thin layer of warmed beans on each crisp tortilla.

    Add carne asada

    Top each tortilla with sliced carne asada.

    Top with veg and cheese

    Sprinkle shredded lettuce and cheese over the steak.

    Finish and serve

    Top with salsa, avocado slices (optional), cilantro, and a squeeze of lime from the lime wedges. Serve immediately.
