Tacos

  1. 1

    Prepare marinade

In a bowl, whisk together lime juice, orange juice, garlic, cumin, chili powder, salt, pepper, olive oil, and chopped cilantro to make the carne asada marinade.

  2. 2

Pat the steak dry and place in a zip-top bag. Pour marinade over, seal, and refrigerate for at least 30 minutes (up to 4 hours).

  3. 3

Meanwhile, make pico de gallo: combine diced tomatoes, diced onion, chopped cilantro, minced jalapeño, and lime juice. Season with salt. Let flavors meld for 10-15 minutes.

  4. 4

Preheat grill or grill pan over high heat.

  5. 5

Remove steak from marinade and pat dry. Grill steak 3-4 minutes per side for medium-rare (adjust time for desired doneness). Let rest for 5 minutes, then slice thinly against the grain.

  6. 6

Warm tortilla shells on the grill or a dry skillet until pliable, about 30 seconds per side.

  7. 7

Assemble tacos: place a few slices of steak on two tortillas; top with a spoonful of pico de gallo or onion-with-c cilantro, and finish with a squeeze of lime.

  8. 8

Serve with extra lime wedges and optional onions and cilantro on the side.
