Marinade

Method

Marinade

  1. 1

In a large bowl, whisk together orange juice, lime juice, olive oil, garlic, cumin, chili powder, oregano, black pepper, and salt.

  2. 2

Pat the flank steak dry and place in the marinade. Add the jalapeño. Turn to coat. Cover and refrigerate for 60 minutes.

Grilling

  1. 3

Preheat a grill or grill pan to medium-high heat.

  2. 4

Remove steak from marinade, letting excess drip off. Reserve the marinade for optional baste.

  3. 5

Grill steak 4-6 minutes per side for medium-rare, or to desired doneness.

  4. 6

Transfer to a cutting board; tent with foil and rest 5-10 minutes. Slice thinly against the grain.

Tortillas

  1. 7

Warm the tortillas on the grill or a dry skillet until pliable, about 15-30 seconds per side.

  2. 8

Brush with a little melted butter or oil if desired.

Assemble Tacos

  1. 9

Place sliced carne asada on warm tortillas.

  2. 10

Top with diced onion, cilantro, pico de gallo, and queso fresco.

  3. 11

Serve with lime wedges on the side.
