    Prepare the carne asada marinade

    Whisk together orange juice, lime juice, soy sauce, olive oil, minced garlic, ground cumin, black pepper, and salt in a large bowl or resealable bag. If using, add orange zest. Add the flank steak and turn to coat.

    Marinate

    Seal and refrigerate for at least 30 minutes, up to 4 hours, to develop flavor.

    Grill or pan-sear the carne asada

    Preheat a grill or heavy skillet over high heat. Remove steak from marinade, pat dry, and grill 4–6 minutes per side for medium-rare depending on thickness. Optional: brush with a little oil during cooking.

    Rest and slice

    Transfer steak to a cutting board and tent loosely. Let rest 5–10 minutes, then slice thinly against the grain into bite-size pieces for folding.

    Prepare the quesadillas

    Heat a clean skillet over medium heat. Place a tortilla in the skillet, sprinkle about 1/2 cup cheese, distribute carne asada, onion (if using), and cilantro. Top with another tortilla. Press gently to compact.

    Cook 2–3 minutes per side, until the tortilla is golden brown and cheese is melted. Flip carefully to prevent spilling filling.

    Transfer folded quesadillas to a cutting board. Slice into wedges and serve with lime wedges. Optional: garnish with extra cilantro.
