Prepare the fries
Preheat oven to 425°F (220°C). Rinse potatoes, cut into even fries, pat dry. Toss with 2 tablespoons oil and a pinch of salt. Spread in a single layer on a parchment-lined baking sheet.

Bake the fries
Bake 25-30 minutes, flipping halfway, until crisp and golden. Remove and set aside.

Make carne asada marinade
In a bowl, whisk together minced garlic, 1 tablespoon lime juice, 1 tablespoon orange juice, 2 teaspoons cumin, 2 teaspoons chili powder, 1 teaspoon paprika, 1/2 teaspoon oregano, 3/4 teaspoon salt, 1/4 teaspoon black pepper, and 1 tablespoon olive oil.

Make pico de gallo
Combine diced tomatoes, red onion, minced jalapeño, cilantro, 2 tablespoons lime juice, and 1/4 teaspoon salt. Mix and let flavors meld for about 10 minutes.

Prepare crema
If using straight sour cream, stir in a pinch of salt and a squeeze of lime if desired. Set aside for serving.

Assemble
Place fries on a serving platter or individual plates. Top with sliced carne asada, spoon pico de gallo over, dollop crema, and sprinkle Cotija cheese. Garnish with lime wedges and serve immediately.
