Preparation

Carne Asada

1. Marinade and rest

Whisk together garlic, jalapeño, orange juice, lime juice, olive oil, cumin, chili powder, paprika, salt, and black pepper. Add flank steak and toss to coat. Cover and marinate 30-60 minutes (refrigerated).

2. Preheat grill or heavy skillet over high heat. Remove steak from marinade, pat dry, and grill 3-5 minutes per side for medium-rare to medium.

3. Let the steak rest 5-10 minutes, then slice thinly against the grain.

Guacamole

4. Make guacamole

Scoop avocado flesh into a bowl and mash to your desired texture. Stir in red onion, tomato, cilantro, lime juice, and salt. Adjust seasoning to taste.

Pico de gallo

5. Make pico de gallo

Combine diced tomatoes, white onion, jalapeño, cilantro, lime juice, and salt. Mix well and let flavors meld for about 10 minutes.

Tortillas & Assembly

6. Warm tortillas

Warm 4 large flour tortillas in a dry skillet or microwave until pliable.

7. Assemble burros

On each tortilla, layer slices of carne asada, a spoonful of guacamole, and pico de gallo. Add shredded cheese and sour cream if desired. Roll up the burrito, tucking in the sides.

8. Serve immediately with lime wedges.
