    In a bowl or resealable bag, whisk together lime juice, orange juice, olive oil, minced garlic, cumin, chili powder, paprika, salt, and pepper. Add the flank steak and turn to coat evenly. Marinate in the refrigerator for 2 to 4 hours, turning halfway if possible.

    Cook the Carne Asada

    Remove the steak from the marinade and pat dry. Heat a grill pan or heavy skillet over high heat with a small amount of oil. Sear the steak 3 to 4 minutes per side for medium-rare to medium, depending on thickness. Transfer to a cutting board and let rest 5 to 10 minutes before slicing thinly against the grain.

    Prepare the Salad Base

    Wash and dry the romaine; chop and place in a large serving bowl. Add cherry tomatoes, corn, black beans, avocado, cilantro, and jalapeño if using.

    Shred or crumble the cheese. Crush tortilla chips lightly to create crunchy topping. Place pico de gallo or salsa and sour cream/Greek yogurt within reach, along with lime wedges.
