Add the diced onion and sauté until translucent, about 4-5 minutes.

Increase heat to medium-high and add the ground beef. Break up the meat with a spoon and cook until browned, about 6-8 minutes.

Stir in the cumin, chili powder, paprika, salt, and pepper. Cook for 1-2 minutes to bloom the spices.

Pour in 1/2 cup water and simmer the beef mixture until most of the liquid is reduced and the beef is moist but not soupy, about 5-7 minutes.

Taste and adjust seasoning if needed. Remove from heat and let cool slightly so it can be easily spooned into tortillas.
Tortillas and Frying

Warm the corn tortillas briefly to make them pliable (wrap in a clean towel and microwave 20-30 seconds, or warm in a dry skillet).

Place about 2-3 tablespoons of beef filling near one end of a tortilla. Roll tightly around the filling and secure with a toothpick.

Pour vegetable oil into a wide skillet or frying pan to a depth of about 1 inch and heat over medium-high heat until shimmering.
