In a skillet, heat 1 tablespoon olive oil over medium heat. Add the onion and sauté until translucent, about 3-4 minutes.

Add the ground beef and cook, breaking it up with a spoon, until browned and no longer pink, about 5-7 minutes.

Stir in the cumin, chili powder, paprika, and salt. Cook for 1 minute to bloom the spices.

Pour in the tomato sauce and beef broth. Add jalapeño if using. Simmer the mixture until slightly thickened, about 5-7 minutes.

Warm the corn tortillas on a dry skillet or in the microwave just until pliable.

Meanwhile, pour vegetable oil into a deep skillet to about 1 inch (2-3 cm) depth and heat to 350-365°F (175-185°C).

Divide the beef filling evenly among the tortillas. Roll each tortilla tightly and secure with a toothpick.
