    In a medium saucepan, warm olive oil over medium heat. Add minced garlic and cook for 30 seconds until fragrant.

    Stir in refried beans and water a little at a time to loosen to desired consistency; simmer 2-3 minutes.

    Season with ground cumin, salt, and pepper; taste and adjust seasoning as needed.

Potato Filling

    Dice potatoes into 1/2-inch pieces.

    In a skillet, heat olive oil over medium heat; add onion and garlic and sauté until translucent, about 3-4 minutes.

    Add potatoes to the skillet with ground cumin, smoked paprika, salt, and pepper. Cook, stirring occasionally, until potatoes are tender and edges are golden, about 10-12 minutes.

Assemble & Serve

    Warm flour tortillas in a dry skillet or in the microwave until pliable, about 20-30 seconds per side.

    Spread a layer of warm refried beans on each tortilla, leaving a 1-inch border.

    Spoon a portion of the potato filling onto the beans.

    Sprinkle with shredded cheese and top with salsa. Add cilantro and a squeeze of lime. If using sour cream or avocado, add a dollop or slices.

    Fold in the sides and roll tightly to form a burrito. Serve immediately.
