Prepare fillets
Pat the triggerfish fillets dry with paper towels, including the skin side. Trim any ragged edges. Dry skin is essential for a crisp sear.

Season and marinade
In a shallow dish combine 1.5 tsp kosher salt, 1 tsp black pepper, 2 tbs lemon juice, 2 tbs olive oil, minced garlic, and thyme. Rub the mixture evenly over both sides of the fillets. Let rest at room temperature for 10–15 minutes (or up to 30 minutes refrigerated) to allow flavors to penetrate and moisture to redistribute.

Heat the pan
Place a heavy skillet (cast iron or stainless steel) over medium-high heat. Add 1.5 tbs neutral oil and warm until shimmering but not smoking, about 1–2 minutes.

Score skin (if thick)
If the skin edge tends to curl, make 2–3 shallow diagonal slashes through the skin only (do not cut into flesh) to keep the fillets flat while cooking.

Sear skin-side down
Carefully place fillets skin-side down in the hot pan, spacing them so they do not touch. Press each fillet gently with a spatula for 20–30 seconds to ensure full contact with the pan. Reduce heat to medium. Cook skin-side down, undisturbed, until the skin is brown and crisp and the fish is about 75% cooked through at the side, about 4–6 minutes depending on thickness.

Finish on flesh side
Flip the fillets and add 1 tbsp unsalted butter to the pan. Spoon the melted butter over the fillets for 30–60 seconds to finish cooking; total internal doneness should be opaque and flake easily (about 1–2 minutes after flipping). Remove fillets to a warm plate and tent loosely with foil to rest for 2–3 minutes.

Make pan sauce
Keep the pan over medium heat. If there is more than 1 tbsp fat remaining, pour off excess leaving about 1 tbsp. Add the minced shallot and sauté for 30–45 seconds until softened. Pour in 1 tbs white wine (or fish stock) and scrape up Brown bits with a wooden spoon. Stir in rinsed capers and the remaining 1 tbsp butter until melted, then add chopped parsley and a squeeze of lemon to taste. Taste and adjust seasoning with a pinch of salt and pepper if needed.

Serve
Spoon the warm pan sauce over the rested triggerfish fillets, serve with lemon wedges and optional sides (baby potatoes or steamed vegetables).
Optional accompaniment

If serving with baby potatoes: boil or steam until tender (about 12–15 minutes), toss with butter, salt and parsley. If serving vegetables: steam or saute until crisp-tender and season simply with olive oil, salt and lemon.
