Method
Daiquiri (classic)
Chill glass
Place a coupe or small cocktail glass in the freezer or fill with ice water while you prepare the cocktail so it will be nicely chilled when you strain in the drink.
Measure ingredients
Using a jigger, measure 2 oz white rum, 1 oz fresh lime juice, and 0.75 oz simple syrup into a cocktail shaker.
Add ice and shake
Add about 1 cup of ice to the shaker (enough to fill it roughly two-thirds). Seal and shake vigorously for 10–15 seconds until the shaker is very cold to the touch and you see good exterior frost — this both chills and dilutes the cocktail to the proper balance.
Double strain (optional)
If you want a silky texture free of ice shards or pulp, place a fine strainer over your chilled glass and pour the cocktail through the shaker strainer and then the fine strainer. Otherwise, just strain from the shaker into the chilled glass.
Garnish and serve
Express a lime twist over the drink or drop a lime wheel on the rim. Serve immediately.
Simple syrup (if making from scratch)
Combine equal parts granulated sugar and water (for example 1/2 cup sugar and 1/2 cup water) in a small saucepan. Heat gently, stirring, until the sugar fully dissolves. Remove from heat, let cool to room temperature, then transfer to a bottle and refrigerate. Keeps for about 2–3 weeks.
