Prepare crabs
Pat the cleaned soft-shell crabs dry with paper towels. If not already done, remove gills (dead man’s fingers) and the apron; trim the tips of claws if desired. Season both sides lightly with 0.5 tsp kosher salt and a few grinds of black pepper.

Make dredge and egg wash
In a shallow bowl combine the all-purpose flour, cornmeal, 1 tsp kosher salt, 0.75 tsp black pepper, garlic powder and paprika. In another bowl whisk the eggs with the milk until uniform.

Dredge crabs
Heat a large skillet over medium-high. Set up a workstation: dredge bowl, egg wash, and a rack or plate for finished crabs. Working one at a time, coat each crab first in the flour mixture (press to adhere), then dip in the egg wash, then return to the flour mixture for a light double-coat. Shake off excess and rest on the rack for 2–3 minutes.

Pan-fry crabs
Add the neutral oil to the preheated skillet and swirl to coat. When oil shimmers (about 350°F if using a thermometer), add the crabs flat-shell side down. Cook 3–4 minutes without moving, until golden and crisp. Carefully flip and cook the other side 2–3 minutes until crisp and cooked through. Transfer crabs to a warmed plate and keep in a low oven (200°F / 95°C) while you prepare the brown butter cascade.

Make brown butter
In a clean skillet (use the one you fried in if you like the fond, wiped to remove excess oil but keeping any brown bits), melt the unsalted butter over medium heat. Swirl and stir frequently as the butter foams, then subsides and turns nutty brown with small brown bits on the bottom — about 4–6 minutes. Watch closely to avoid burning.

Flavor and finish butter
Remove the skillet from heat for a moment, then add the lemon juice, chopped parsley and capers (if using). Return to very low heat for 20–30 seconds to meld flavors. Taste and season with sea salt flakes. The result should be a glossy, fragrant brown butter sauce ready to cascade.

While crabs rest before frying (or while brown butter cooks), toss the sliced cabbage and red onion with mayonnaise, apple cider vinegar, sugar, salt and black pepper. Adjust seasoning to taste. Chill briefly if time allows. Serve alongside the crabs for contrast and crunch.
