Prepare glass (optional)

If you want a sugared rim, rub a lime wedge around the glass rim, then dip the rim lightly into superfine sugar. Set glass aside and chill briefly in the freezer (2–3 minutes).

Mix

Add 2 oz white rum, 1 oz fresh lime juice, and 0.75 oz cane sugar syrup into a cocktail shaker filled with ice (about 4 oz of ice).

Shake

Shake vigorously for 10–15 seconds until the shaker is well chilled and slightly frosted. This both chills and dilutes the cocktail to proper balance.

Strain

Double-strain (using a Hawthorne strainer and a fine mesh strainer if available) into the prepared chilled coupe or rocks glass. If serving on the rocks, fill the glass with fresh large ice and pour over.

Garnish & Serve

Garnish with a lime wheel or wedge on the rim. Serve immediately.
