Chill and clean
Keep oysters cold until ready to shuck. Rinse shells under cold running water and scrub to remove grit. Drain and place oysters in the refrigerator on a towel while you prepare garnishes and sauces.

Prepare your workstation: a sturdy surface, thick towel or shucking glove, oyster knife, a bowl for liquor (if you wish to keep) and a tray lined with crushed ice to serve. Safety first: always hold the oyster with the hinge away from fingers and use controlled pressure with the knife.
Make the Sauces

Classic Mignonette
In a small bowl combine red wine vinegar, very finely minced shallot, cracked black pepper, and sugar (if using). Stir and let sit at least 10–15 minutes so the shallot softens and flavors meld. Taste and adjust acidity/pepper.

Cocktail Sauce
In another small bowl mix ketchup, prepared horseradish (start with 2 tsp, add more to taste for heat), Worcestershire sauce, fresh lemon juice, and a few dashes of hot sauce if desired. Stir until well combined and chill briefly.

Spicy Soy-Chili (optional)
Whisk together light soy sauce, rice vinegar, sesame oil, and chili oil or sambal. Stir in thinly sliced scallion. Taste and adjust balance—add more vinegar for brightness or more chili for heat.
Shucking & Plating

Shuck the oysters
Using a towel or glove to protect your hand, place the oyster cup-side down (deeper side catches liquor) with the hinge facing you. Insert the tip of the oyster knife into the hinge and twist gently until it pops. Slide the knife along the top shell to sever the muscle, lift off the top shell and discard. With the oyster flat, slide the knife under the oyster to free it from the bottom shell, preserving the liquor. Work steadily — each oyster takes about 30–60 seconds with practice.

Arrange on ice
Spread a layer of crushed ice on the serving platter. Nestle each shucked oyster into the ice, cup-side down so the oyster sits in its liquor. Space evenly and garnish the platter with lemon wedges and a sprinkle of chopped parsley for color.

Place small bowls of mignonette, cocktail sauce, and spicy soy-chili on the tray or alongside the oysters so guests can choose. Provide extra lemon wedges and small forks if desired.
