Prepare Oysters and Plating

    Chill and plate

    Fill a large shallow serving platter or individual oyster plates with the crushed or shaved ice. Make sure ice forms a stable bed with small wells to hold oysters level.

    Shuck the oysters if not already shucked. Rinse shells quickly under cold water to remove grit, then place each oyster, liquor and all, onto the ice bed in its half shell. Keep oysters chilled while you finish preparations.

Make South Carolina Red Lime Mignonette

    Combine vinegar and aromatics

    In a small bowl combine the red wine vinegar, fresh lime juice, and minced shallot. Stir to combine so the shallot begins to macerate and soften.

    Add red pepper and seasoning

    Stir in the finely chopped pickled or roasted red pepper, granulated sugar, kosher salt, and freshly ground black pepper until sugar and salt begin to dissolve.

    Finish the mignonette

    Whisk in the extra-virgin olive oil until the mixture looks glossy. Taste and adjust: if it needs more brightness add up to 1 tsp more lime juice; if too sharp add a touch more sugar (up to 1/2 tsp). Chill the mignonette for at least 15 minutes to let flavors meld. Keep chilled until serving.

Prepare Fresno Chile and Herbs

    Slice the Fresno

    Trim the stem ends from the Fresno chiles. Slice one chile very thinly into rounds for garnish; slice the second chile in half lengthwise, remove seeds if you want less heat, then finely julienne into matchsticks. For a milder finish, soak slices in cold water for 5 minutes then drain.

    Prepare herbs

    If using micro cilantro, leave whole. If using chives, thinly chiffonade or snip into 1/4" pieces. Pat herbs dry to avoid excess moisture on oysters.

Dress the Oysters

    Using a small spoon, place about 1/2 to 3/4 teaspoon of the chilled South Carolina red lime mignonette onto the top of each oyster, letting a little of the oyster liquor mix with the sauce. Adjust amount to taste but avoid oversaturating so oysters remain briny and balanced.

    Top each oyster with a piece or two of thin Fresno round or a small matchstick, and a few micro cilantro leaves or a snip of chive. Sprinkle a very light pinch (a small fraction of 1/8 tsp) of flaky sea salt over the oysters if desired — do not oversalt.

    Finish with a light dusting of freshly ground white pepper if using, and arrange lime wedges around the platter for guests.

Serve

    Keep the platter on ice and serve immediately so oysters are cold and fresh. Provide small forks or oyster picks, napkins, and a separate spoon for the mignonette so guests can add more to taste.

    Leftover mignonette may be refrigerated up to 48 hours in a sealed container. Do not leave opened oysters at room temperature; discard any uneaten oysters after 2 hours out of refrigeration.
