Prepare Oysters
Shuck and arrange
Rinse the oyster shells under cold running water to remove grit. Using an oyster knife, carefully shuck each oyster keeping as much of the liquor in the half shell as possible. Discard the top shells and transfer the oysters on a rimmed baking sheet lined with a folded kitchen towel or on a bed of coarse salt to keep them level. Refrigerate while you prepare the topping if needed.
Preheat the broiler: position the oven rack 4–6 inches (10–15 cm) from the broiler element and preheat to high (about 500–550°F / 260–290°C). If your broiler has only one setting, use high.
Make Vadouvan Butter Topping
Soften and combine
In a small bowl, mash the softened unsalted butter with a fork until smooth. Add the vadouvan spice blend, minced garlic, minced shallot, lemon zest, oil, salt, and pepper. Stir thoroughly until the mixture is homogeneous. Taste a small amount on a cracker to check seasoning and adjust salt or vadouvan if necessary. The final mixture should be spreadable but firm.
Portion the topping
Using a small spoon or a piping bag (or a zip-top bag with one corner snipped), portion about 1/2 teaspoon to 3/4 teaspoon of the vadouvan butter onto each oyster, placing it to one side so it melts over the oyster as it broils. If using panko for crunch, lightly press approximately 1/8 teaspoon of panko onto the butter on each oyster (optional).
Broil and Finish
Broil
Place the prepared oysters under the preheated broiler. Broil 2–4 minutes, watching closely: you want the butter to bubble and lightly brown and any panko to toast, but avoid overcooking the oyster. The edges of the oyster will just begin to curl when done. Total broiling time depends on distance from element and broiler strength—start checking at 90 seconds.
Garnish and serve
Remove the oysters from the oven. Immediately sprinkle the thinly sliced scallions over the hot oysters, and dust lightly with smoked paprika if using. Serve hot with lemon wedges alongside for squeezing. Place oysters on a bed of coarse salt or a warmed platter to keep level while serving.
Safety note: consume immediately and discard any oyster that did not open during shucking or that smells off.
