Black Bean Patties

    Prepare beans

    Place the cooked black beans in a large bowl. Using a fork or potato masher, mash about half of the beans until mostly smooth but still a bit chunky. This gives the patties structure and texture.

    Sauté aromatics

    Heat 1 tablespoon olive oil in a small skillet over medium heat. Add the chopped onion and cook 4–5 minutes until softened and translucent. Add the minced garlic and grated carrot and cook 1–2 more minutes until fragrant. Remove from heat and let cool slightly.

    Mix patty ingredients

    To the mashed beans add the sautéed onion/garlic/carrot, panko breadcrumbs, chopped cilantro or parsley, cumin, smoked paprika, kosher salt, and black pepper. Crack in the egg (or add prepared flax egg). Stir until combined. If the mixture feels too wet to form, add additional tablespoon(s) of panko until it holds together; if too dry, add 1–2 teaspoons water or a splash of olive oil.

    Form patties

    Divide the mixture into 4 equal portions (for 4 burgers). Shape each portion into a patty about 3/4-inch thick and slightly wider than the bun (they will shrink slightly when cooking). Place patties on a plate and chill in the refrigerator 15 minutes to firm up (optional but recommended).

    Pan-fry patties

    Heat the remaining 1 tablespoon olive oil in a large skillet over medium heat. When hot, add the patties (work in batches if needed) and cook 4–5 minutes per side until a golden-brown crust forms and patties are heated through. Reduce heat slightly if they brown too quickly. Transfer cooked patties to a plate and keep warm.

Assembly & Toppings

    Prepare avocado spread

    Halve and pit the avocado. In a small bowl, mash the avocado with the lime juice, 1/4 tsp salt and 1/4 tsp black pepper until slightly chunky. Taste and adjust seasoning.

    Toast buns

    Cut brioche buns in half and toast cut-side down in a dry skillet or in a toaster oven until lightly golden, about 1–2 minutes.

    Season mayo (optional)

    In a small bowl, stir the mayonnaise with a pinch of salt and a little lime juice (about 1/2 tsp) to brighten flavor. This step is optional but recommended.

    Assemble burgers

    Spread a tablespoon of the seasoned mayo on the bottom half of each toasted bun. Place a handful of lettuce on top of the mayo, then set a warm black bean patty on the lettuce. Add 1–2 slices of tomato and a few rings of red onion. Spoon about 2 tablespoons of mashed avocado over the patty, then sprinkle approximately 2 tablespoons of crumbled feta on top. Cap with the top bun.

    Serve

    Serve the burgers immediately while patties are warm. Offer extra lime wedges and salt/pepper at the table. Leftover patties keep in an airtight container in the refrigerator for up to 3 days; reheat gently in a skillet or oven.
