    Shuck oysters

    Rinse shells under cold water and scrub. Using an oyster knife, carefully shuck oysters and reserve liquor in a bowl. Arrange oysters on half shells on a tray over crushed ice or on a bed of coarse salt to stabilize. Keep chilled.

    Prepare blackening butter

    In a small bowl whisk together melted butter, olive oil, lemon juice, minced garlic, blackening spice blend, smoked paprika, kosher salt, and black pepper until homogenous.

    Blacken oysters

    Preheat a heavy cast-iron skillet or griddle over medium-high heat until very hot (about 4–6 minutes). Spoon about 1 teaspoon of the blackening butter over each oyster. Place oysters directly in the hot skillet or under a very hot broiler (3–4 inches from heat). For skillet: cook until edges of oyster curl slightly and butter forms a dark, fragrant crust, about 1–2 minutes. For broiler: broil 1–2 minutes until butter is darkened but not burnt. Rotate pan if necessary for even color. Remove and keep warm briefly; oysters should be cooked just until edges begin to firm — avoid overcooking.

Watermelon Relish

    Combine the diced watermelon, minced shallot, minced jalapeño, chopped mint, lime juice, honey, salt, and black pepper in a bowl. Gently toss to combine. Let sit refrigerated at least 10 minutes to meld flavors. Taste and adjust salt, lime, or honey as needed. Keep chilled until plating.

Pear & Apricot Chutney

    In a small saucepan over medium heat, combine diced pear, chopped apricots, minced shallot, apple cider vinegar, brown sugar, grated ginger, mustard seeds, salt, and 1/4 cup water. Bring to a gentle simmer, then reduce heat to low. Simmer, stirring occasionally, until pears are tender and mixture has thickened slightly, about 12–15 minutes. If too thick, add a tablespoon or two of water. Remove from heat and let cool slightly; chutney will thicken more as it cools. Taste and adjust seasoning.

Green Tomato Chow Chow

    In a bowl combine diced green tomatoes, diced green bell pepper, diced onion, and diced celery. In a small saucepan warm the white vinegar with sugar, salt, turmeric, and red pepper flakes just until sugar dissolves. Pour the hot vinegar mixture over the vegetables and toss to combine. Let the chow chow sit at room temperature for 20–30 minutes, then refrigerate at least 30 minutes to allow flavors to marry. Drain slightly before using if there's excess liquid.

Garnish & Plating

    Prepare serving tray: spread crushed ice in a shallow tray and sprinkle coarse sea salt to help stabilize shells. Arrange the half-shell oysters over the ice, grouping evenly.

    Top each blackened oyster with a small spoonful of one of the accompaniments: alternate watermelon relish, pear & apricot chutney, and a small dollop of green tomato chow chow so guests get variety. Use about 1 teaspoon of relish or chutney per oyster. Garnish with microgreens or chopped parsley and a light squeeze of lemon over oysters just before serving.

    Serve immediately while oysters are warm with lemon wedges on the side. Keep remaining relishes chilled for guests who want extra.
