Soup Preparation

    Prepare the Base

    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened and the onion is translucent.

    Add Garlic

    Stir in the minced garlic and cook for an additional 1 minute, stirring constantly to avoid burning.

    Incorporate the Vegetables

    Add the diced zucchini, green beans, and tomatoes to the pot. Mix well and cook for another 5 minutes until the vegetables start to soften.

    Add Broth

    Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to a simmer and add the salt and black pepper.

    Cook the Fish

    Gently add the snapper fillets into the pot. Cover and let simmer for about 10-12 minutes, or until the fish is cooked through and flakes easily with a fork.

    Finish with Basil

    Just before serving, stir in the chopped basil leaves. Adjust seasoning with additional salt and pepper if necessary.

    Ladle the soup into bowls and serve hot, garnished with extra basil if desired.
