Shrimp Preparation

    Season the Shrimp

    In a bowl, season the peeled and deveined Gulf white shrimp with salt and black pepper. Allow to sit for about 15 minutes.

    Prepare Breading Stations

    Set up three bowls: one with all-purpose flour, one with beaten eggs, and one with panko bread crumbs.

    Bread the Shrimp

    Dredge each shrimp in flour, shaking off excess. Dip in the beaten eggs, and then coat with panko bread crumbs. Set aside on a baking sheet.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Shrimp

    Carefully add the breaded shrimp to the hot oil in batches. Fry until golden brown and cooked through, about 2-3 minutes. Remove and drain on paper towels.

Mousseline Sauce

    Make the Mousseline

    In a mixing bowl, whip the heavy cream until soft peaks form. Gently fold in the softened butter, adding salt and white pepper to taste. Set aside in the refrigerator.

Shrimp Mayonnaise

    Prepare the Shrimp Mayonnaise

    In a bowl, mix mayonnaise with finely chopped cooked shrimp, lemon juice, and chopped chives. Adjust seasoning to taste.

Assembly

    Plate the Dish

    On a serving plate, place a dollop of mousseline sauce. Arrange the fried shrimp on top and garnish with shrimp mayonnaise and fresh shiso leaves.
